Broiled Salmon with Creamy Lemon Sauce

My husband LOVES this recipe, because he loves lemon-y type things. I am not a HUGE fan of lemon, but even I love this dish. It's super easy, and most ingredients you probably have in your cabinets right now! This is from one of the South Beach recipe books. Enjoy!

Servings: 4

Ingredients:
1 tablespoon extra virgin olive oil
1 clove garlic, minced
1/4 cup lemon juice
2 tablespoons capers
1 teaspoon lemon-pepper seasoning
1/2 cup fat-free sour cream
1 1/2 pounds salmon fillet

Instructions:
Preheat the oven to 350F. Coat a baking sheet with cooking spray.

Heat the oil in a small saucepan over medium heat. Add the garlic and cook for 1 minute. Reduce heat to low. Stir in the lemon juice, capers, and lemon-pepper seasoning and cook for 5 minutes. Add the sour cream and cook for 5 minutes, or until heated through.

Meanwhile, place the salmon on the prepared baking sheet. Bake for 10 minutes, or until the fish is just opaque. Serve with the sauce.

Nutrition:
Per serving: 368 calories, 22g fat, 4 g saturated fat, 35g protein, 5g carbohydrates, 0g dietary fiber, 100mg cholesterol, 383mg sodium.

Note: I've made this without capers, and it turns out just fine :) You might want to add a pinch of salt to the sauce if you don't use this ingredient.

Peachy Pork Chops

This recipe is what I decided to make for dinner tonight. I've made it numerous times, and my family LOVES it. It's extremely simple yet tasty, and I've decided to share it with you! If you try it out please let me know how you liked it, and if you changed how you made it, added or subtracted ingredients, etc.

Prep Time: 10 mins Servings: 4

INGREDIENTS:
4 (1 1/4 inch) thick pork chops
salt and pepper to taste
1 tablespoon vegetable oil
1 (29 ounce) can sliced peaches, drained and syrup reserved
3 tablespoons brown sugar
1 teaspoon ground ginger

INSTRUCTIONS:
Heat oil in a large skillet over medium heat. Trim all visible fat from chops and season with salt and pepper to taste. Brown chops in vegetable oil.
Combine reserved peach syrup, brown sugar and ginger. Pour over chops and bring to a boil. Add peaches and cook, uncovered for 15 to 20 minutes or until liquid is reduced to half and thick. Turn chops occasionally to insure even cooking. Serve!

NOTE:
I've made this with light peaches, and it turns out just as good with a lot less sugar!

I usually don't shop at Walgreens, their reward system is WAY more disorganized than CVS. Half the time a Register Reward doesn't print, and I don't like how you have to do a zillion transactions to get RRs. Also, RR's expire in 2 weeks, unlike CVS whose ECBs expire a month from the print date.
Anyway, I had some great coupons and just COULDN'T pass up the good deals I got at Walgreens.

And I couldn't be more RELIEVED. lol, don't get me wrong, I can't WAIT to celebrate Jesus' birth and see family and friends, but this year the events leading up to Christmas has completely wiped me out. We've been involved with church, Violet went away for the weekend, I've been wrapping presents, cleaning the house from top to bottom, having guests over for dinner, going to other people's houses, sending off Christmas cards, packing for my parents' house this weekend, helping Violet get over her sickness, making cookies, etc. (which reminds me, I need to make the dough for the Stained Glass Sugar Cookies I need to bake today).

I try not to get overwhelmed with everything during the holidays, because it just stresses me out more. I have to realize that God doesn't care if I didn't wrap the presents right, or get all the lights up on the house, or forgot to water my tree (OOPS!), but He wants us to focus on the REAL reason for the season: Jesus Christ's birth and what it means for mankind. We should ALL reflect on what a sacrifice it was for God to send his only begotten son to save the world from their sins. So that WE would have a place in heaven. If it wasn't for Jesus' birth, he wouldn't have died, and we wouldn't have the option to be saved. I am thankful to know such a great and merciful God!

Anyway, I guess instead of typing this I need to finish my cookies. I just remembered, I still have to ice my gingerbread men!! Yikes! They actually turned out pretty good, I'll have to take a picture of it and post the recipe. I love me some gingerbread!

They like to STEAL your work and call it their own! When I was a mod there I worked on a post for TWO weeks, it was a restaurants eclubs link post and I spent SO much time on it. I was so proud of it and glad that I could help people out!

Before I left I erased it, and I found out the next day (when I got kicked out of the mod staff) that another mod reinstated it, so I IMd the owner and asked him to take it down, because it was my work. So he did.

Come to find out, today ANOTHER mod posted the SAME exact post, with some information erased, and called it her own. I was very upset and again I IMd the owner and asked him to take it down. He replied with "oh when you post stuff on WUC it's public property and we can do whatever we want with it...yadda, yadda, yadda..." Basically that was his answer to me, and he couldn't respect me enough to take it down like I had asked. So instead of having morals, they accept and know full well that it's my work marked as someone elses and they have no remorse for it. It's a shame, I thought WUC was different than other coupon sites out there, but I guess they had me fooled!

So please, be aware that they have some loophole in their TOS that states they can take ANYTHING you post there and do WHATEVER they want with it. Nice, I wanted to post MY list on MY blog, and now it seems like I stole it now, huh???

If you were so lucky to get the Red Plum insert from 10/27 you'll find a coupon good for these meters, up to $30.00 making them FREE. That's not even the best part-sure free is great, but money makers are even better. After you pay the tax on one of these meters after using the coupon, you'll get a $5 Register Reward printed out!

Leigh was nice enough to trade me some coupons so that I could have 2 of the meter coupons, since my area doesn't distribute Red Plum (thanks Sati! :))

Here are the details, I did 2 transactions, each one looked like this:

1 Bayer Contour blood glucose meter, $14.99
Used the Red Plum coupon to get it FREE
Paid only tax, $1.21

So I got 2 meters for free, paid only $2.42 for both of them, and received $10 in Register Rewards making this a $7.58 money maker!
These meters are usually $79.99 so I saved $158.98 on 2 meters.

Don't worry if you don't need meters, you can donate them to many places (including veterinarian offices!) or give them to someone you know who has blood sugar issues. My husband is hypoglycemic and sometimes needs to test his blood sugar, so when I get meters for free it's very beneficial, since refills on test strips are so expensive! Meters come with test strips so we don't have to buy any.

On a coupon board I read quite frequently (WUC) someone listed the CVS deal with Johnson and Johnson this week to be a money maker. This week CVS was offering $5.00 Extra Care Bucks back when you buy $10 worth of Johnson and Johnson Red Cross first aid products. Among the J&J products that qualified was a $0.99 mini first aid kit. So you would only have to spend about $10.00 to get back the $5.00 ECB...50% off, good deal right? Well to make it EVEN better, there was a coupon out there (I found them at Walgreens) for $1.00 off one Johnson and Johnson red cross item, and J&J confirmed that it was OK to use this coupon on the mini first aid kits. So FREE!!! PLUS Extra Care Bucks back. Here is what my transaction looked like:
(I actually made quite a few trips to different CVS's, but to cut time down I will just list it all as one)

50 Johnson and Johnson mini first aid kits
Total: $49.50
Total after coupons: Around $4.00 for all 50, I only paid tax

ECB received: $25.00!!!

So to recap, CVS paid me $25.00 in Extra Care Bucks to take home 50 FREE Johnson and Johnson first aid kits. Nice!! Ryan will put some of them away with his "survival" stuff and the rest we will donate to either our church or send them off to some soldiers.

New haircut!

Call me crazy, but today I went to get my hair cut and you guessed it...I used a coupon lol! I got an awesome haircut, blowdry and style from an upscale salon today for only $20.00!!! The coupon was for new customers, and the normal price for those services is $40.00, so half off. Not too bad!

Craigslist.org is a great site to find deals for your hair. I actually found the coupon on my local Craigslist under the "beauty" section. Many stylists post an ad on there to book new clients and generate business and usually offer a discount of some kind.

The UPS man just knocked on my door and gave me a package. Opened it up and was very surprised to find a complete face cleansing set FREE for me to try! I can't go into details and tell you what exactly I got and what brand it is, but this is the reason I LOVE to do market testing-you get free products and usually money as well for your trouble of trying products and filling out surveys.

This is one on the reasons I advocate survey sites-they are constantly looking for people to be product testers, and you usually get to keep the items when you're done. I have received NUMEROUS products to try over the year, and always enjoy the experience. I get many products to try as well as compensation, so many in fact that I often forget what is being sent to me until I receive it!

Hi! Just a little introductory post. My name is Tina, I am 25, and I'm a stay at home mom to a beautiful baby girl, Violet Elizabeth. She was born on May 31st 2007, and that day my world flipped upside down and completely changed! Most definitely one of the happiest days of my life.

Thankfully my husband has a good job so I can stay at home, and I am VERY grateful for that! (He actually just lost his job last Thursday, he's going out tomorrow morning to look for another. It's quite common to be laid off in the construction industry. It's just a little harder with this economy job to find work elsewhere. We are currently in prayer about it, we know God will take care of us!)

My husband and I started going to a local Baptist church out here, and it has changed both of us for the better. We absolutely love our church, as does Violet. I am so happy and thankful that God led us to a great group of people who have the same principles and values that we do. It is very encouraging to be around people like that, and it makes me strive to be a better Christian.

I consider myself frugal-I regularly clip and use coupons. I am working on building a bigger, better stockpile at the moment, slowly but surely! I will post pictures and details about my trips on here as well, as frugality is a BIG part of my life, I love to save money, and my husband loves it too! :D I consider it to be a hobby of mine.

Other hobbies I have are: scrapbooking, reading, writing, spending time with my pets, and trying to work out more.

That pretty much sums it up, keep reading and you'll learn even more about my family!
